Potato Leek Soup


Ingredients:
7 leeks
4 medium potatoes
2 carrots
3 sticks celery
2 medium onions
2 cloves garlic
3 cardamom
salt
freshly ground black pepper (optional)

Additional ingredients: 3 chopped leeks + chives to add texture to the soup after being smoothed in the food processor.

Directions: 
In a pot add 1 litre of water + all ingredients, chopped
When they are cooked, place in a food processor until smooth. Add the additional chopped leeks and chives and simmer the soup, add water to reach the desired soupy consistency. Season to taste


Tip: careful with the black pepper,  it was a little overpowering; a little goes a long way. Personally I might eliminate it from my recipe next time.
