2 tbsp hummus dip
2 red bell peppers
2 tbsp chopped Chives
After washing cut the peppers in half and clean out the seeds. Place on tray and roast untill completely cooked through but not dry (don't worry if the skin turns black).
Peel the skin off the peppers and place the fleshy part into the mixer.
Add the two tablespoons of hummus to the mixer and mix well until smooth.
Add lemon juice and salt to taste, and give it a quick mix.
Remove from the mixer and add the chopped chives and mix it in with a fork or spoon.
Serve and enjoy! <3
